Mini Chocolate Chip Cookie Cups

I found this idea over on Picky Palate.  She has some of the best dessert recipes.  Don't go there if you like chocolate a lot, like me, and you try hard NOT to bake yummy treats every day of the week, like me.


It's a simple recipe, really. 

You just make your favorite chocolate chip cookie recipe- mine just happens to be the Nestle one (with an extra teaspoon of vanilla, see below). 

Then put about 1 tablespoon of cookie batter into greased mini muffin pans.


Bake at 350 degrees for about 10-12 minutes, until lightly golden.

When still hot, press down the center of the cookies so there is room for the filling (I used the end of a wooden spoon).


Cool for 10-15 minutes and remove from the pan. 

For the filling:
Mix 8 oz. cream cheese
1/2 c. brown sugar
1 tsp vanilla

Scoop into the center of the cookies.  Top with chocolate shavings or mini chocolate chips. 

I have stored my leftovers in the fridge since they are full of cream cheese- they are really good cold, too. 



Nestle Chocolate Chip Cookie Recipe:

1 c. butter
2 eggs
3/4 c. brown sugar
3/4 c. white sugar
1 tsp baking soda
1 tsp salt
1 tsp vanilla (I use 2 tsps)
2 1/4 c. flour
1 12 oz.  bag chocolate chips

Cream butter & sugars.  Add eggs, vanilla & mix well.  Add dry ingredients & stir in choc. chips last.
