1/4 c. butter, melted
3 Tbsp Dijon mustard
2 Tbsp honey
1/4 c. bread crumbs
1 Tbsp chopped parsley
4 (4 oz) salmon filets
1/4 c. finely chopped nuts (almonds, pecans or macadamia )
Preheat oven to 400. Stir together butter, mustard & honey. In another bowl mix nuts, bread crumbs, & parsley. Brush honey mustard on salmon & sprinkle with bread crumb mixture. Bake until salmon flakes easily with a fork approx 10-15 min. Garnish with lemon wedges.
My Mom often grills it. She puts it on heavy duty aluminum foil & on the grill. It's really good that way. I have never liked seafood- at all! This recipe convinced me that I could learn to like seafood if it's prepared well. It is really great over a salad, too.
