You're gonna love this one-even if you don't much care for spinach. This is great. A family favorite. Can you tell my family likes food? We have so many family favorites! Pretty sure this is a Greek recipe.
10 oz. frozen chopped spinach (thawed & drained)
6 oz. feta cheese (1 c. crumbled)
1 c. small curd cottage cheese
1 small onion, minced
2 Tbsp snipped fresh parsley
1 tsp dried dill weed
3 beaten eggs
1 Tbsp soft butter
½ c. melted butter
½ pkg. (16 oz) frozen phylo (filo) dough. Thawed
½ tsp salt
Mix spinach, feta and cottage cheese, onion, parsley, dill and salt. Stir in eggs. Brush 9x13 baking dish with softened butter. Unfold the phylo leaves. Remove 10 pieces and refreeze the rest. Cut the 10 pieces in half. Gently separate 1 piece and place in dish folding edges to fit the pan. Brush gently with melted butter. Repeat 9 more times. Heat oven to 350 degrees. Spread spinach mixture over the phylo dough. Layer 10 more pieces spreading each layer with melted butter and tucking the sides around the edges to cover the filling. Cut the top layer of leaves into squares. Cook uncovered until golden brown, about 35 minutes. Let stand 10 minutes.
