1 Tbsp. Vegetable oil
2 chopped onions
Salt & pepper
Dash of chili powder
Dash of Cumin
1 tsp. thyme
2 cans white beans, drained
1 can kidney beans, drained
1 can pinto beans, drained
4 c chicken broth
¾ c. grated cheddar cheese
In a large pot, sauté onions. Add seasonings. Add beans & broth. Bring to a boil. Reduce heat, cover and simmer for 10 minutes. Puree all in a blender. Return it to the pot & return to a boil. Serve with grated cheese on top. Other kinds of beans can be substituted, I did it with black beans instead of white because that's what I had on hand and it was very tasty!
