We made this for breakfast on Sunday for Mother's Day. It's a great coffee cake recipe.
1 ½ c. flour
¾ c. sugar
1 ½ tsp baking powder
¾ tsp salt
¼ c. shortening
¾ c. milk
1 egg
1 sliced apple, blueberries, raspberries, peaches (any fruit you want)
I started using 1 c. froozen, thawed raspberries & blueberries It's fabulous this way!
Topping:
½ c. brown sugar
½ c. flour
3 Tbsp butter
½ tsp cinnamon
Grease a round cake pan. Preheat the oven to 350. Mix ingredients for batter (except fruit) Pour half of batter in pan, place sliced fruit on top and cover with remaining batter. Sprinkle topping on top. Bake 40-45 minutes. The cook time varies depending on the fruit you use. When I do it with berries it takes up to 45 minutes. When I do it with apples it takes more like 35 minutes. The moisture from the berries makes it take a little longer. This recipe can also be done without fruit in the middle & is good that way, too.
