Here is a light one after the long weekend of eating. I made this on Friday for the 4th of July barbecue & it was gobbled all up.
¼ c. cider vinegar
1 Tbsp sugar
3 Tb olive oil
2 Tb. Dijon mustard
1 tsp minced garlic
½ tsp dry mustard
½ tsp pepper
¼ tsp salt
1 lb green beans
½ c. minced red onion
1 can garbanzo beans
1 can kidney beans
1 tbsp lemon juice
Combine all ingredients in a large bowl & toss well. Other beans can be added or substituted. Season more to taste.
