I got this recipe from my Mom's file box & she got it out of some magazine- not sure which one...sorry! But let me tell you, I made it the other night & it's GOOD (& easy which is always a bonus).
4 chicken breasts
4 Tbsp flour
2 Tbsp olive oil
2 Tbsp butter
1 can chicken broth
1/4 c. fresh lemon juice
garlic salt & pepper (to taste)
Pound chicken breasts to about 1/2 inch thick. Dredge lightly in flour. In a large frying pan melt butter with oil. Add chicken & cook until lightly browned on both sides & cooked through. Remove chicken from pan, add broth, lemon juice, & whisk in extra flour ( I ended up adding a little extra to thicken it some more). Bring to boil & return chicken to sauce. Let it thicken slightly.
