What to do with all these giant zucchinis from my garden??? I went hunting tonight & I found this little delicacy. I put my own spin on it by adding tomatoes & parmesan to the mix. We loved it & ate it all up- each of us taking seconds (except for little Mr. Picky Pants). I even said I will probably make more tomorrow- I mean really what am I going to do with all of this zucchini??? Any ideas? Can you freeze it?
Zucchini Roma
1 pound Zucchini. (about 2 medium)
2 T butter or margarine
1/2 cup shredded mozzarella or cheddar
1/3 cup Italian-style breadcrumbs
1/2 t Italian seasoning
1/4 c parmesan cheese
1-2 tomatoes, sliced
Cut zucchini in half lengthwise and slice into 1/2-inch thick slices. In large skillet over medium-high heat, melt butter. Add slices; cook until crisp-tender, about 4 minutes. Add tomatoes. In small bowl, combine remaining ingredients. Top zucchini with bread crumb mixture. Cover & let stand one minute (so cheese melts). Serve immediately. If you don't have Italian bread crumbs, just use extra Italian seasoning.
Makes 4-6 servings...or 2 or 3 if you really like Zucchini.
