Grilled Pizzas

These were so delicious!


Dough recipe-
1 tsp sugar
1 packet yeast (about 1 Tbsp)
2 tsp olive oil, plus more for the bowl and for brushing the dough
course salt & ground pepper
2 1/4 c. bread flour, or all purpose flour, plus more for the work surface
1 c. warm water

Pour water into large bowl; add sugar and yeast. Let stand until foamy, about 5 minutes.

Mix oil and teaspoon of salt into the yeats mixture. Add flour and stir with a wooden spoon (or your mixer) until liquid is incorporated. Turn onto a flour work surface and knead about 2 minutes. Transfer to oiled bowl and drush dough lightly with oil. Cover and let sit until doubled- 30-45 minutes. Punch down and let rise again another 30 minutes.

Turn dough onto lilghtly floured surface. Divide into 4 equal pieces. Stretch or roll into an oval. Brush lightly with herb oil and season with salt and pepper.

Heat grill to medium-high heat. Clean & lightly oil the grill. PLace the dough directly on the grill, oiled side down. Brush the other side with oil. Cook until underside is lightly charred and top is forming bubbles- 1 to 2 minutes. Flip over and cook another 1-2 minutes. Remove and top. Return to grill for another 2-5 minutes after topped.

Herb oil-
In a small saucepan, combine 1 clove minced garllic, 2 tsp minced fresh rosemary leaves, and 1/2 c. olive oil. Simmer & cook about 3 minutes. Use to brush on pizza dough.

Simple tomato sauce-
heat 2 Tbsp olive oil with 4 cloves of mince garlic, add diced tomatoes- we used fresh, but you can also use canned. Season with salt, pepper, & fresh herbs- oregano & basil. Bring to a boil& simmer for about 15 minutes until the water cooks out & it begins to thicken.

Toppings:
tomato sauce
fresh mozzerella
parmesean cheese
tomatoes
sausage
asparagas
peppers
caramelized onions (saute them with a little oil & some sugar)
pepperoni
or any other favorite combinations you like.
