Happy first day of fall!! Here's a nice fall recipe for you.
Have you ever made your own doughnuts? They are SO incredibly good! They take a bit of time, but oh- it's so worth it. If you are planning any October parties, these would be a great addition.
Apple Cider Doughnuts
2 c. sugar
1 Tbsp + 2 tsp cinnamon
1 1/2 c. apple cider
2 tsp baking powder
1 tsp salt
3 1/2 c. flour
4 Tbsp melted butter
2 large eggs + 1 egg yolk
6 c. vegetable oil, for frying (Mmm! fried food)
Combine 1 c. sugar & 2 Tbsp cinnamon in a paper bag & set aside. Bring cider to boil over medium heat. Cook until it has reduced to 1/2 c. stirring occasionally. This takes about 20 minutes. Let cool.
In a large bowl whisk together baking powder, salt, 1 c. flour & remaining 1 cup of sugar and 2 tsp cinnamon until combined. Add in cider, melted butter, eggs, yolk, and cooled cider and mix well. Whisk until smooth. Add remaining flour and mix until just combined. It will be slightly sticky dough. Refrigerate about 10 minutes.
Pour oil into a large pot & attach a candy thermometer to the side (make sure it doesn't touch the bottom of the pot) Heat over med-high heat until the temp reaches 375 degrees F. Keep it from overheating.
Turn dough onto a floured countertop & coat fingers with flour. Pat dough into 1/2 " thickness. Using a doughnut cutter, (or 2 round cutters, one large, one smaller), cut out doughnuts and holes. Transfer to a baking sheet lined with parchment.
Working in batches, carefully slide into the oil. After about 1 minute, they will rise to the surface & begin to brown. Turn over & fry another minute & a half. Transfer to a plate lined with paper towels. Bring oil back to 375 before frying the next batch. When doughnuts have cooled a minute, toss in the bag with sugar & cinnamon & coat. Remove to a clean plate. Serve.
