1 1/2 c. rice
2 Tbsp olive oil
2 Tbsp lemon juice
1/2 tsp oregano
1/4 tsp red pepper
2 diced tomatoes
2 oz. crumbled feta cheese
2 Tbsp fresh parsley
Cook rice as usual. After cooked, add in remaining ingredients and mix.
Really good! It had a spicy kick to it, so my kids wouldn't eat it...
