Creamy Turkey and Wild Rice Soup




One of my favorite things to do with Thanksgiving leftovers is to make turkey and rice soup.  After eating the regular leftovers for a few days, it is something refreshingly different.  Plus, it's freezing here right now, so a warm bowl of soup is just what I want!  It's a really simple thing to put together since the turkey is already cooked. 


1 c. Diced carrots
1 c. Diced onions
1 c. Diced celery
2 cloves minced garlic
(any other veggies you want to add in- corn, green beans, potatoes, diced tomatoes...)
2 c. cubed turkey
1/2 c. rice (I like using wild rice)
5-7 c. broth
Season with some tasty herbs (rosemary, parsley, oregano, thyme, a bay leaf, choose your favorite), salt & pepper

Saute the onions, garlic, carrots & celery in a little olive oil.  Add remaining ingredients and bring to a boil, reduce to a simmer and cover until rice is cooked through and vegetables are tender-crisp.  If you want to make it easier, precook the rice. 

Make it creamy & add in 1 c. cream  and 1/4 c. flour to thicken before serving.
