This is such a yummy treat! It's a fun snack for company or just a day you feel like something sweet. My kids and I loved this little treat. It is crispy crunchy and chocolatey...mmmmm!
1/2 c. coarsely chopped almonds
6 c. plain popped popcorn
1/2 c. packed brown sugaar
4 Tbsp butter
2 Tbsp light corn syrup
1/8 tsp baking soda
1/2 tsp vanilla
1 lb. semi-sweet chocolate
Preheat the oven to 350 degrees. Spread the almonds on a cookie sheet and bake 5-7 minutes until fragrant. Cool. Reduce temp to 250. Spread the popcorn and almonds together on the baking sheet.
In a small saucepan, combine brown sugar, butter and corn syrup. Bring to a boil, stirring frequently. Remove from heat and add the baking soda and vanilla. Pour over the popcorn and almonds, stirring to coat. Bake for 1 hour, stirring every 15 minutes. Let cool, then crush slightly.
Line a rimmed baking sheet with foil. Melt the chocolate and pour onto the foil-lined pan. Top with the popcorn mixture, lightly pressing it into the melted chocolate to make sure it sticks. Refrigerate 2-3 hours until set. Break into pieces and store in the refrigerator.
