I have been making this pancake mix for quite a while now and we really enjoy it. I found the recipe and modified it A LOT to make it whole/multi-grain. I make a big batch and keep it in a canister to be mixed up whenever we want it for breakfast. It is cheap and easy to throw together. It is amazing paired with homemade buttermilk syrup or topped with all fruit spread & fresh berries.
Multi-Grain Pancake Mix
4 c. Whole Wheat Flour
1 c. Oats- pulsed in a blender or food processor
1 c. Powdered milk
1/4 c. Ground Flax Meal
1/4 c. Sugar
2 Tbsp Baking Powder
1 1/2 tsp. Salt
Mix and store in an air-tight container.
To Make into Pancakes:
1 1/2 c. mix
3/4 to 1 c. Water
2 Tbsp Vegetable Oil
1 egg
1/4 c. Applesauce or Canned Pumpkin
Splash of Vanilla or dash of Cinnamon for more flavor
Mix and cook on a griddle or in a frying pan. Makes about 6 large pancakes. Top as desired.
