Beef & Barley Soup

This is a simple, but delicious recipe.  I love it because it is quick to make & I typically have all of these ingredients on hand. 


Beef & Barley Soup

1 lb. ground beef
1-2 c. sliced carrots
1-2 c sliced celery
3 cloves garlic
1 ½ c barley
1 container V8 juice
1 bay leaf
4-5 beef bouillon cubes
water
1 tsp thyme
parsley
salt & pepper to taste

Sauté beef and remove fat. Combine all ingredients and simmer until cooked through.  (Pour in enough water to cover the meat and vegetables. )
