Mexican Casserole

We eat a lot of Mexican food here. This is one of our favorites.

1 1/2 lbs. ground beef
1 envelope taco seasoning (I use a little more because we like a lot of flavor)
3/4 cup water
1 can (16 oz) refried beans
1/2 cup salsa
6 flour tortillas (6 inch)
2 cups frozen corn thawed (I have also used 1 can of whole corn)
2 cups (8 oz) shredded cheese

Cook the beef in a large skillet, over medium heat, drain.
Stir in taco seasoning and water.
Bring to a boil. Reduce heat; simmer, uncovered for 5 min.
Mix the beans and the salsa in a microwave-safe bowl. Cover and microwave for 1-2 minutes.
Place 3 tortillas in a greased round 2 1/2-qt baking dish.
Layer with half the beef, beans, corn, and cheese; repeat layers
Bake uncovered, at 350 for 40-45 minutes.
Let cool 5 minutes.
Serve with shredded lettuce, chopped tomatoes, sliced olives, and sour cream if desired.

I made this last night for dinner. It was really good. My family liked it. I know it's good when my husband goes back for seconds & he did! I added bell peppers & onions in with the meat when I cooked it. We topped it with sour cream tomatoes, avocado, & lettuce. yum!
