Pesto Panini

I have had this for lunch about 10 times in the last 2 weeks...I'm not kidding even a little bit. It is my latest favorite creation. One of the best parts is that most of the stuff is from my garden making it that much more delicious!

Whole wheat bread-something that has some substance.
Pesto Sauce
2 Slices Colby-Jack Cheese (Or fresh Mozzerella is amazing on it, too)
Sliced tomatoes
Fresh spinach
Chicken strips or turkey breast

Spread the pesto on the bread. (I made some homemade pesto, see below, or you can buy it pre-made) Put a slice of cheese on each side of bread, fill with tomatoes, fresh spinach & meat. I vary it from day to day depending on my mood. Often it is meatless, sometimes I add fresh bell peppers to it. Place in Panini maker & cook until crisp. If you don't have one, just cook it like a grilled cheese sandwich. Works well that way, too.


Basil Pesto
1 1/2 cup Basil - before chopping
3 Tablespoons Pine Nuts
1/3 cup Parmesan Cheese
1/2 cup Extra Virgin Olive Oil
1 Clove Minced Garlic
Dash of Salt - optional

Puree in food processor.  Super easy!
