Chicken Canneloni


So this is one of my favorites to order at Macaroni Grill. Yeah, I love the place. I tried to find a copycat recipe to match theirs. This recipe is pretty close (after my additions & alterations) I love it. It's kinda time consuming if you make the chicken yourself. If you want to save time you could use canned chicken or pre-cooked chicken strips or something.

8 oz. cooked chicken breasts (about 2)
1 oz. fresh chopped spinach (or frozen, thawed & drained)
10 oz. Ricotta cheese
1/2 c. parmesan cheese
3 oz. grated mozzarella cheese
1/2 tsp pepper
2 cloves garlic
1 Tbsp chopped fresh basil
1 tsp salt
12 cannelloni (or rolled lasagna) noodles

Sauce:
16 oz alfredo sauce
16 oz. tomato sauce
grated parmesan & mozzarella


Cook pasta. Cook & shred chicken. Mix it with the spinach, cheeses & seasonings. Fill cooked noodles with 2-3 Tbsp of filling. Place side by side in shallow baking dish. Pour sauces over the top. Sprinkle top with parmesan & extra Mozzarella cheese. Cover with foil & bake @ 350 for 20 minutes. Remove foil & bake an additional 20 minutes.
