Brazillian Beans & Rice


My husband served a mission in Brazil & had beans & rice for at least once a day for 2 years. Somehow, he still likes this. I love it. (I prefer black beans & he prefers pinto beans, though)

2 cans black or pinto beans (or 2 c. dried beans, soaked & cooked)
1 diced onion
1 piece of bacon
2 bay leaves
2 cloves minced garlic
1 chopped kielbasa sausage

In a large pot, saute onions, sausage, & garlic together in a little oil. Add 2 cans of beans (undrained), bacon, & bay leaves. Simmer together for about 20 minutes. Serve over rice. Remove bay leaves & bacon before serving.
