Lemon Bread


This stuff is so good. My Mom's been making this for as long as I can remember. I always loved it.


1 c. sugar
5 Tbsp butter
2 eggs
½ c. milk
½ tsp salt
1 1/c c. flour
grated rind (zest) of 1 lemon
1 tsp baking powder

Blend butter and sugar until creamy. Beat in eggs, and milk and mix well. Add dry ingredients. Beat until smooth. Add lemon rind. Pour into greased bread pan. Bake 1 hour at 350 degrees.

While baking make glaze:
Juice of 1 lemon
½ c. sugar

Mix until sugar dissolves. Spoon over baked bread as soon as it comes out of the oven. Leave bread in pan until it is cooled.

I tried this recipe last night - delicious!!! And super easy! I ended up making three mini loaves and added dried blueberries to two of them - didn't care for how chewy the dried blueberries were - I think next time I'll try fresh or frozen. It was way good without the blueberries too. Thanks for sharing!

You can make the same recipe without butter by using 1 cup low fat yogurt (or lemon yogurt), 1 additional egg, 1/2 cup vegetable oil, and no milk. Also you can cut the sugar down to 3/4 cup for the loaf, and 1/4 cup for the syrup.
