Colorburst Cupcakes


My kids had so much fun helping me make these yesterday. We had a big family dinner & they were a hit. They would be a fun birthday party cupcake for sure. This is another recipe from Our Best Bites -a current favorite recipe blog of mine. She has some really fun ideas.

1 White cake mix
2 eggs
1 c. sour cream
1/2 c. milk
1/3 c. vegetable oil
Gel food coloring (red, orange, yellow, green & blue)

Combine all ingredients, except food coloring. Divide batter into separate bowls -I used 5 colors & it ended up being just under 1 c. batter for each color. Color wit food coloring. The gel kind gives a much brighter color with less of it. I used about 1/4 tsp for each color. Watch out, your fngers will get stained!
Line the pans with cupcake liners & fill with 1-2 tsps of each color. I started with blue & put it in every one. You have to spread it out a little to make it cover the bottom. Then layer green, yellow, etc. It is a little time consuming spreading each color out.

Bake according to package directions. Top with fun frosting & sprinkles.
