What Do You Eat in the Summertime?

I don't know about you, but I eat completely different in the summertime versus the winter months. In the summer, I like to eat light, fresh, cool meals like salads & lots of fruit. In the winter, I prefer warm meals like soups, stews & casseroles-comfort foods.


Here are a few of my favorite quick & easy summer meals. Serve them with froit on the side- since there is so much of it this time of year. Both of them are very adaptable to your tastes. There are no proportions because it's all by sight on these recipes.


Barbecue Chicken Salad
Chicken Breasts
Barbecue sauce
Corn
1 Can Black beans
Tomatoes
Green onions
Romaine lettuce
Tortilla chips
Ranch Dressing
Grated Cheddar Cheese

Pour barbecue sauce on chicken & grill it. Cut into pieces to toss into a salad. Chop up veggies of your choice & toss all together with ranch. Crumble tortilla chips on top.





Taco Salad

Ground beef
1 packet taco seasoning
1 can kidney beans
1 diced onion
Bell peppers
Lettuce
Tomatoes
Grated Colby Jack Cheese
Tortilla chips
Salsa
Avocados (or guacamole)
Sour cream
Catalina dressing

Cook the beef, onions & peppers together with the taco seasoning. On a plate layer tortilla chips, meat, lettuce, & all other toppings yo'd like. Dress with Catalina dressing.

I'm going to have to try the BBQ Chicken Salad, my husband loves chicken cooked with bbq sauce (I'm just not the hugest fan).

Having grown up in the cold tundra of Minnesota I used to be scared of summer food. Soups and casseroles just seemed so much easier, but with middle age I've grown to really prefer the lighter, healthier fare of summer. That BBQ chicken salad looks delicious!
