Raspberry Cream Cheese Bars


This is a recipe from a local bakery here, Flour Girls & Dough Boys. They had it in the local UV Mag last month & I finally got around to making them. Actually I wanted to make them for family dinner a few weeks back but my mom forbid me because she was dieting & they would be too big of a temptation. Turns out- it was true. They are amazing.

Raspberry Cream Cheese Bars

2 sticks butter
1 c. sugar
2 c. flour
1 c. oats
12 oz (1 1/2 pkg) cream cheese
3/4 c. sweetened condensed milk
1 c. raspberry jam

Cream the butter & sugar. Add the flour & oatmeal and mix to make a crumbly dough. Press 2/3 of the dough into a greased 9x13 pan. Set aside the other 1/3 of the dough for the topping. Combine cream cheese & sweetened condensed milk and beat until smooth. Drop ont the crust and spread out. Soften the jam in the microwave until runny. Spread over the cream cheese mixture. Crumble the remaining dough over the top. Bake at 350 degrees for 35-45 minutes or until the crust is lightly browned.
