Zucchini Roma


What to do with all these giant zucchinis from my garden??? I went hunting tonight & I found this little delicacy. I put my own spin on it by adding tomatoes & parmesan to the mix. We loved it & ate it all up- each of us taking seconds (except for little Mr. Picky Pants). I even said I will probably make more tomorrow- I mean really what am I going to do with all of this zucchini??? Any ideas? Can you freeze it?



Zucchini Roma

1 pound Zucchini. (about 2 medium)
2 T butter or margarine
1/2 cup shredded mozzarella or cheddar
1/3 cup Italian-style breadcrumbs
1/2 t Italian seasoning
1/4 c parmesan cheese
1-2 tomatoes, sliced

Cut zucchini in half lengthwise and slice into 1/2-inch thick slices. In large skillet over medium-high heat, melt butter. Add slices; cook until crisp-tender, about 4 minutes. Add tomatoes. In small bowl, combine remaining ingredients. Top zucchini with bread crumb mixture. Cover & let stand one minute (so cheese melts). Serve immediately. If you don't have Italian bread crumbs, just use extra Italian seasoning.

Makes 4-6 servings...or 2 or 3 if you really like Zucchini.

Hi Karyn! It's Mary from the fireside group :) I saw your blog address on Facebook and am so excited that you love to cook! So do I :) Your Zucchini Roma recipe looks delicious! Growing up, we always had tons of zucchini as well - so my mom would grate it, put it in sandwich size ziploc bags, and freeze it. Then, when she wanted to make zucchini bread, she just pulled out a bag, thawed it in the microwave, and dumped it in! So, yes - you can freeze it! The Lion House cookbook has a really yummy recipe for chocolate zucchini bread; and Mercy River's website has a recipe for zucchini brownies...ENJOY!

Karyn, This looks delicious! I absolutely LOVE zucchini! I have made a similar recipe- but I am always game for a new one. I was making a comment, because I wanted to tell you you can freeze it.I do exactly what Mary said in her comment- I grate it in my food processer in about 2 seconds, and throw it in ziplock freezer bags. It is very handy for zucchini bread, brownies, cake- anything that you want it shreaded in. It comes out pretty good.Its a great way to use some of that awesome home grown goodness! :) Don't you love harvest time!!! Me too!! :) Have fun!
