Upside-Down Apple Gingerbread Cake

I haven't done a whole lot of cooking the past week or so. I did can some yummy apple pie filling. Believe it or not I still have some apples left from the giant picking we did a few weeks back. I want to try making some apple butter with the remaining ones. Here's a recipe I really want to try that has apples in it as well. I think it sounds so delicious.



Upside-Down Apple Gingerbread Cake

2 Tbsp butter
3 Apples, cored, peeled & sliced
2 Tbsp brown sugar

Saute together in a frying pan over medium heat until softened, about 5 min. Pour into greased 8" round cake pan- arrange apples in a single layer.

2 1/2 c. flour
3/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
6 Tbsp butter
1/3 c. sugar
1 egg
1/2 c. light molasses
1/2 c. hot water

Beat butter, sugar, egg, & molasses. Add dry ingredients & water & mix while gradually adding flour. Pour evenly into the pan over the apples. Bake in preheated oven @ 350 degrees for 45 minutes until a toothpick inserted into the center comes out clean. Let cool about 10 minutes on a cooling rack. Run a knife around the edges to loosen, then invert onto a serving plate.
