Italian Layered Spread

This is a delicious dip that is so pretty to serve- especially around holiday time! You'll impress everyone with this one!


Italian Layered Spread

Mix & set aside:
2 (8 oz) pkg. cream cheese
3 green onions, finely minced (use white part)
1/2 c. chopped pine nuts

Pesto: (you'll only use 1/3 of this recipe, so save the rest for other yummy things!)
1 c. loosely packed fresh basil
4 Tbsp. fresh parsley
2 large cloves garlic
1/4 c. pine nuts
1/4 c. olive oil
1/2 c. fresh Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper

Line a loaf pan or mold with plastic wrap. Divide the cream cheese mixture into fourths. Press 1/4 cream cheese mix into pan
1 layer of pesto
1 layer of cream cheese mixture
1 layer of chopped sun dried tomatoes packed in oil
1 layer of cream cheese
1 layer of chopped black olives
final layer of cream cheese.

Refrigerate. When ready to serve, invert onto a plate 7 press extra pine nuts on top. Serve with crackers and a knife.
