Cranberry-Orange Caramel Corn

I made this over the weekend.  It was a great recipe.  I really like the cranberries and almonds in it.  It makes it quite different from other caramel corn that I have had.  I do wish it tasted a little more orangey, though.  If you make it & figure out how to bring out the orange flavor, let me know...

Since I clipped this out of a magazine & don't remember which one, I can't give you the source, but it says on top that it won a $100 prize.  That gives you a little evidence that it must be good, right?   

Here's the recipe:

12 c. popped popcorn (about 1/2 c. kernals
1 c. dried cranberries
1 c. whole almonds
1/2 c. (1 stick) butter
1/2 c. packed brown sugar
1/4 c. light corn syrup
3 Tbsp orange juice
2 tsp vanilla
1/2 tsp baking soda

In a very large bowl, combine popped popcorn, cranberries, and almonds.  Set aside. 

In a saucepan, cook and stir the butter, brown sugar and corn syrup over medium heat until the butter is melted.  Stir in the orange juice.  Bring to boiling, over medium heat.  Boil for two minutes.  Remove from heat and stir in the vanilla and baking soda.  Mixture will get foamy. 

Pour over popcorn mixture and stir to coat well. 

Transfer to a large baking sheet or shallow roasting pan.  Bake for 30 minutes at 275 degrees, stirring twice.  Pour onto a large sheet of greased heavy foil to cool.
