Pumpkin Pancakes with Orange Syrup

I love all things pumpkin.  I made these amazing pancakes recently.  I love that they are packed with vitamins with the pumpkin in it. Plus, if you use wheat flour, they're even better for you!  I also really loved the orange syrup over it- it is so much healthier & still so tasty. 




Pumpkin Pancakes

2 c. flour
2 Tbsp packed brown sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 tsp pumpkin pie spice
1 1/2 c. milk
1 c. canned pumpkin
2 eggs
2 Tbsp vegetable oil
1 recipe Orange Syrup (see below)
1 orange, peeled & sectioned

Mix together dry ingredients in a medium bowl.  In another bowl, mix wet ingredients.  Pour wet ingredients into the dry ingredients and mix until just combined.  The batter should be lumpy. 

Lightly grease a griddle or frying pan heated to medium heat.  For each pancake, pour about 1/4 c. batter.  Cook about 2 minutes per side, until lightly golden.


Orange Syrup

1 c. orange juice
2 Tbsp honey
2 1/2 tsp cornstarch
1/4 tsp cinnamon

Cook in a medium saucepan over medium heat until thickened and bubbly.  Cook and stir 2 more minutes.  Serve warm over pancakes.

Top with orange slices.
