Tropical Mango Sorbet

I was recently contacted by the National Mango Board to share some healthy and delicious mango recipes with you. They also gave me a great cookbook- Mango Eats & Treats. I adore mangos. I grew up in southern Florida and there were mango trees all over the place. So, when I eat a fresh, ripe mango, it makes me feel like I am home again! I was thrilled to receive this in the mail!

Did you know?
Mangos are available all year round
They have over 20 different vitamins and minerals
One cup of mango is only 100 calories
Here are a few things we did with our mangos...

Tropical Mango Sorbet

Recipe for Tropical Mango Sorbet
3 ripe mangos- peeled, pitted and chopped
2 Tbsp sugar
Juice from 1 lime- (or about 2-3 Tbsp)
1/4 tsp coconut extract
1 c. pineapple juice
Puree ingredients together until smooth and freeze according to manufacturer's instructions in an ice cream maker.

I made a little video showing you how to cut a mango properly, and you can see my kids enjoying the mango sorbet we made.

Also check out this recipe I posted a little while back for Salmon with Fruit Salsa using mangos.
