Chicken Tortilla Soup

1 onion
3 cloves garlic, minced
olive oil
2 tsp chili powder
1 tsp oregano
1 can diced tomatoes
4 c. water
1 c. corn
1 can diced green chiles
1 can black beans, drained
1 tsp cumin
4 chicken boullion cubes
1 Tbsp lime juice
2-3 chicken breasts, cooked, cubed
salt & pepper to taste

Toppings (optional)
green onions
fresh cilantro
avocado
tortilla chips, crushed
grated cheese (cheddar or monteray jack)


Saute the chicken, onion & garlic together. Add water, seasonings and boullion cubes. Bring to a boil. Add remaining ingredients & simmer about 20 minutes. Top with desired toppings.
