Crustless Zucchini Quiche

Print Friendly and PDF This is a great one to use all the zucchini from the garden. It's delicious.

1 c. zucchini, julienned (or grated)
1 c. grated Monterey Jack cheese
1 c. grated Swiss cheese
6 eggs
1 1/2 c. half & half
1/4-1/2 tsp pepper
1/2 tsp garlic powder
1 1/2 tsp dried parsley
1 Tbsp butter
1/4 c. wheat germ
1/4 c. Parmesan cheese

Preheat oven to 325 degrees. Use butter to grease square pan. Sprinkle wheat germ evenly around bottom & sides of pan. Grate the zucchini & pat dry with paper towels. Spread zucchini evenly in pan first, then add the cheeses. Beat eggs in a bowl and add half & half, pepper, garlic, & parsley. Pour over zucchini. Bake 40-50 minutes. To test done-ness, stick a knife into the center. It should come out fairly clean. (Double & bake in a 9x13 pan for larger groups)
