Parmesan Chicken

This is one my Mom made for us a lot growing up. I always loved it. We had it this week with some garlic risotto & sauteed veggies. It was SO delicious!

4 Chicken breasts
2 egg whites
1/2 c. Seasoned bread crumbs
1/2 c. Parmesan cheese
1/4 c. Ground flax seed (my added healthy bonus!)
Olive oil

Mix together bread crumbs, parmesan cheese & flax meal on a plate. Separate eggs & place egg whites in a bowl. Trim chicken breasts into strips & remove fat. Dip chicken in egg whites then into bread crumb mixture. Sautee in a little olive oil until cooked through.
