Pork Tenderloin with Soy, Ginger and Lime

Every other week we have a big sunday dinner with our whole family. We had this for dinner last night & it was some of the best meat I have had in a long time. Everyone that was over loved it, too & requested the recipe.

1/4 c. soy sauce
1/4 c. rice vinegar
1 Tbsp fresh lime juice
1 Tbsp vegetable oil
1 tsp grated fresh ginger
1 clove minced garlic
1 pork tenderloin (about 1 lb)

Combine all ingredients. Add pork to marinate. I usually put it all in a ziploc bag. Marinate 30 minutes at room temp, or overnight in the fridge depending on when you will serve.

Heat grill to medium-low heat. Lightly oil the grates. Grill turning occasionally until internal temp reads 145 degrees, about 18-20 minutes. Let sit 5 minutes before slicing.
When we served it we put a Ginger-Soy dressing/marinade made by Masa's over the top. We found it at our local Costco. It was a really good dressing with it. I think also it would be good if you doubled the marinade above & kept some aside to serve on top after it's cooked.
