Almond Poppyseed Cake

Print Friendly and PDF This is one of my Dad's favorites. My Grandma used to always make it for their family at Christmas time. It's so good when warm! In fact he just begged my Mom to make it this week. It was gone in about an hour...




4 large eggs
1 tsp almond extract
¼ c. poppy seeds
½ c. shortening
½ c. pineapple juice (Be generous on this if you live in a dry climate-closer to 2/3 c)
1 yellow cake mix
1 pkg. instant vanilla pudding
1/4-1/2 c. cinnaman & sugar (mixed together)

Blend all ingredients together. Grease the inside of a Bundt cake pan & liberally dust with cinnamon sugar mixture. Pour in batter. Bake at 350 degrees for 45-55 minutes.
