Stir Fry Cashew Chicken

Sorry for the bread kick I have been on. I was just looking over my recent posts to see what I've done lately & realized there have been a lot of breads. Sorry about that. Here's a change for you! This recipe is so good. Every time we make it everyone comments again on how much they like it.

Mix:
1 tsp cornstarch
1/2 c. chicken broth

Mix:
1 Tbsp cornstarch
1 Tbsp soy sauce

1-2 lbs chicken breasts, cut up
1 Tbsp olive oil
1 stalk celery, diced
3/4 lb green beans or snow pes
2 large carrots, diced
1 onion, diced
1 clove minced garlic
2 Tbsp water
1/2 tsp ground ginger (or fresh)
1 c. cashews (not dry roasted)

Mix chicken with soy sace & cornstarch mixture. Place wok or frying pan on high heat & add oil. Cook chicken with veggies and garlic until cooked through & veggies are tender-crisp. Add water, ginger, & broth. Stir until boils & begins to thicken. Stir in cashews. Serve over rice.
