Chocolate Florentine Cookies


My sister always makes these cookies for family gatherings. I LOVE them. I made them for the first time this week. They are easy, delicious & so pretty.

2/3 C. butter
2 c. Quick Oats
1/4 c. Corn syrup
1 c. Sugar
1/4 tsp Salt
2/3 c. Flour
1 tsp Vanilla
2 c. Chocolate chips, melted

Melt butter in a saucepan. Remove from heat. Add remaining ingredients, except chocolate chips. Drop by teaspoon onto a foil lined cookie sheet. The dough will be crumbly, so you'll want to press it together a little. The cookies spread out a lot, so leave plenty of room between each. Bake @ 375 for 9-11 minutes, until lightly golden. Cool for 2-3 minutes & take foil off cookie sheet to a cooling rack to cool until firm. When cooled, peel off foil and sandwich with melted chocolate.
