Chicken Caesar Lasagna


9 lasagna noodles, cooked
1 (10 oz) containers of alfredo sauce, or your favorite home-made kind
3 Tbsp lemon juice
1/2 tsp pepper
3 c. cooked chicken, chopped
1 (10 oz) pkg frozen spinach, thawed & drained
1 c. roasted red sweet peppers, drained & chopped, optional (I might substitute onions)
3/4 c. shredded Italian blend cheese

Preheat oven to 325 degrees. Combine alfredo sauce, chicken, pepper, lemon juice, spinach & peppers. Lightly coat a rectangular baking dish with cooking spray. Arrange 3 noodles on the bottom, top with 1/3 of the chicken mixture. Repeat using all of the ingredients. Cover & bake 45-55 minutes, or until heated through. Uncover & sprinkle with cheese. Bake 5 minutes more, uncovered until cheese melts. Let stand about 10 minutes before serving.


I actually haven't tried this one yet. It's on my to make list. It's been sitting on top of my recipe box all week waiting to be made. Now that I feel better, I might just tackle it! It sounds so good to me.

Oh dear! I am printing this out! I have never heard of a chicken caesar lasagna! YUMMMMM. Lasagna is one of my favorites, so I am always looking for new recipes to try. Perfect!
