Potato and Ground Beef Gratin

I got this recipe from the Pillsbury recipe book from Aug 2008- The Hamburger & Chicken edition. I made it last week & we loved it. My husband ate all the leftovers- he loved it that much! This is a good guy meal- meat & potatoes. It's a nice hearty meal for a cold day.

1 lb lean ground beef
1 tsp salt
1/2 tsp pepper
3 Tbsp butter
1 onion, chopped
3 Tbsp flour
2 tsp fresh thyme, or 1 tsp dried
3 c. milk
3 c. shredded cheddar cheese
6 potatoes, thinly sliced (peeled if you want, I like to leave the peel on mine)

Heat oven to 375 degrees. Spray a 9x13 pan with cooking spray.

In a frying pan, cook beef, onions, & salt & pepper. Cook through & drain fat.

Meanwhile in a small saucepan melt butter over med-low heat. Add flour & mix well. Stir in milk & thyme & bring to a boil. Boil 1 minute stirring constantly. Remove from heat. Stir in 2 c. of the cheese.

Spread half of the potatoes in the baking dish. Top with the beef, spread on remaining potatoes. Pour the cheese sauce over the top.

Bake 45 minutes-1 hr covered with foil. Sprinkle on remaining 1 c. of cheese. Remove foil & bake another 15-20 minutes or until the potatoes are tender & the top is bubbly. Let stand about 5 minutes before serving.
