It's pumpkin season again. I do love this time of year. We carved our pumpkins last night & of course, saved the seeds for roasting. It's so easy, so be sure & give it a try. They are great for snacking on. I think they'd be really good to add to a trail mix as well.
As you carve your pumpkins, save all of the seeds. Put them into a strainer & clean off all of the extra orange slime. Then place them onto a cookie sheet lined with paper towles to dry them off. I let them dry for an hour or so. Then dump off of the paper towel on the tray. It's fine if they are still wet. It helps hold the salt on them. Salt liberally.
Roast @ 400 degrees for about 20 minutes. You'll be able to tell that they are done because they get crispy & slightly browned. Cool & eat!
