Roasted Asparagus with Lemon



2 lb. fresh Asparagus

2 Tbsp olive oil

salt and pepper

2 tsp finely grated lemon zest

1 Tbsp fresh lemon juice

Preheat oven to 400 degrees and line a large rimmed baking sheet with foil. Break off the tough ends of the asparagus. Place on the baking sheet and drizzle with olive oil.

In a small bowl, rub together salt and lemon zest until crumbly. sprinkle over the asparagus and toss to coat. Arrange in a single layer n the pan. Roast until tender 15-20 minutes- shaking once or twice during the cooking time.

Remove from oven and season with pepper and sprinkle lemon juice over the top.
