Layered Southwest Salad


I Love, love, loved this recipe.  This one came from Marzetti, which sells dressings & the Texas Toast croutons & tortilla strips.  It was so tasty!!  My husband doesn't much like it when I make meatless meals, so I added some chicken to the recipe as well. 

1 pkg Texas Toast tortilla strips- I used Chili Lime flavor (They taste a lot like Doritos)
3/4 c. ranch dressing (I made it fresh from the packet)
1/4 c. chunky salsa
1/2 c. halved cherry tomatoes
1 c. cooked rice
2 Tbsp chopped cilantro
1/2 Tbsp vegetable oil
1 can black, kidney, or pinto beans, drained & rinsed
1 c. frozen corn, thawed
2 green onions, diced
2 avocados, cut into 1 inch pieces
1 c. grated cheddar or jack cheese
3 chicken breasts, cooked & cubed
2 Tbsp lime juice

In the bottom of a large bowl, combine salsa & tomatoes.  Pat into an even layer. In another bowl, combine chopped cilantro, oil and lime juice.  Spoon over tomato layer.  Layer beans next, then corn and green onions.  Next add chicken (if desired), ranch dressing, avocados, and shredded cheese.  Sprinkle tortilla strips on top. 

It was really pretty layered, but honestly, I ended up tossing it when we ate it.  It made it easier to get all the yummy parts on your plate.

This looks awesome!! I love Southwest salads!! Our husbands must come from the same tribe as mine is not a fan of meatless meals anyway but since I no longer eat meat he is slowly switching to my tribe!! :) The rule in the house now is if he wants meat he has to cook it himself...you know that rarely happens!
