Blueberry Applesauce Loaf


This bread was delicious- and low in fat as well.  It is from Seneca (the applesauce brand). 

1/4 c. butter (=1/2 stick)
3/4 c. sugar
1/4 c. applesauce
1/4 c. apple juice
2 eggs
1/2 c. milk
1 tsp vanilla
1 3/4 c. flour
1/8 tsp salt
1 tsp baking powder
1 c. fresh or frozen blueberries

Topping :
2 tsp sugar
1 tsp cinnamon


Mix butter, sugar applesauce, and apple juice.   Beat in eggs, milk and vanilla.  Add dry ingredients and mix until just combined.  Gently fold in blueberries last.  Pour into a greased loaf pan.  Combine sugar and cinnamon and sprinkle over the top.  Bake at 350 degrees fir 45-55 minutes, or until a toothpick inserted comes out clean.  Cool 10 minutes in the pan, then remove to a cooling rack to cool completely.
