These were SO good, and they really tasted like peppermint patties. Mint

2 Tbsp + 1 tsp water
1 Tbsp light corn syrup
1 tsp fresh lemon juice
1 tsp peppermint extract
1 lb powdered sugar (3 3/4 c.)
1 Tbsp shortening
12 oz. semisweet chocolate chips
With an electric mixer, combinewater, corn syrup, lemon juice and peppermint extract. Sift in half of the powdered sugar. Add the shortening. Beat on medium then slowly add in remaining powdered sugar until well mixed. Knead into a ball- it will be stiff. iff necessary add in 1/2 tsp more water to make it workable. Flatten into a circle about 1/4 inch thick between 2 sheets of wax paper. Freeze until firm- about 15 minutes.
Cut with a small circle cutter until it is all used up. Put the circles on a cookie sheet and refreeze to make firm again. Melt the chocolate in the microwave or double boiler. Dip the patties in the vmelted chocolate with a fork. This is pretty messy! Return to cookie sheet and harden in freezer for another hour. I kept my extras in a ziploc bag in the freezer.
