Honey-Roasted Vegetables

This recipe is from Martha Stewart.  I really liked it- but I left out the parsnips and did 4 sweet potatoes.


2 Sweet potatoes, peeled and cut into chunks
2 Parsnips, peeled and cut into chunks
4 Carrots, peeled and chopped
1/4 c. Honey
2 Tbsp Olive oil
Salt, pepper
3-5 Sprigs of thyme

Toss ingredients together in a baking dish.  Bake at 375 degrees until tender- about 1 hour.
