Mom's Whole Wheat Bread

This is the bread that my Mom made all of our growing up years.  It is so delicious- and brings me so much joy...  Is it bad that food can do that to me?  It makes 4 loaves- so share some.


2 Tbsp dry yeast
1/2 c. warm water
5 C. hot water
2 Tbsp salt
2 Tbsp Lecithin (found at a health food store)
2/3 c. vegetable oil
2/3 c. honey
12 c. whole wheat flour (= 9 c. wheat, if grinding your own)


I make this is a big Bosch mixer- you may want to half it if you don't have a big mixer. Dissolve yeast in 1/2 c. warm water.  Combine 5 c. water, 7 c. flour, salt, oil, and honey.  Mix.  Add yeast mixture and remaining flour 1 c. at a time until soft doughy consistency is reached.  Knead for 10 minutes (or mix).  Divide into 4 sections.  Roll with a rolling pin on an oiled surface and roll up the dough starting with the thin end.  Seal the ends and place in greased loaf pans.  Let them rise until doubled.  Bake at 350 degrees for 35 minutes.  Brush the top with butter after cooked, if desired.
