Quinoa Black Bean Salad

This recipe is so good!  Can't wait to make it again...

If you have never cooked with quinoa- here is a little about it:

It is a grain/seed from South America that was used anciently.  It is very high in protein (it's a complete protein), amino acids, and is gluten free.  It can be substituted for most any grain.  It is high in potassium & magnesium, so it's very good for the heart as well.  It is a good source of calcium, too.  Super good for you!  It tastes great too.  It's mild- similar to rice.  Give it a try some time. 

1/2 c. uncooked quinoa- cook according to directions
1 can black beans, drained & rinsed
1 Tbsp red wine vinegar
1/2 bell pepper, diced
1 c. corn
1.c diced tomatoes (or cherry tomatoes halved)
1/4 c. diced red onion (or green onion for milder flavor)
1/4 c. minced cilantro

Dressing:
5 Tbsp lime juice
1/4 c. olive oil
pinch of cayenne pepper
1/2 tsp cumin
salt & pepper

Combine all with cooked quinoa. 

Eat. 

Say: "Mmmmm!"
