This recipe is so good! Can't wait to make it again...
If you have never cooked with quinoa- here is a little about it:
It is a grain/seed from South America that was used anciently. It is very high in protein (it's a complete protein), amino acids, and is gluten free. It can be substituted for most any grain. It is high in potassium & magnesium, so it's very good for the heart as well. It is a good source of calcium, too. Super good for you! It tastes great too. It's mild- similar to rice. Give it a try some time.
1/2 c. uncooked quinoa- cook according to directions
1 can black beans, drained & rinsed
1 Tbsp red wine vinegar
1/2 bell pepper, diced
1 c. corn
1.c diced tomatoes (or cherry tomatoes halved)
1/4 c. diced red onion (or green onion for milder flavor)
I love food! I love a great, simple recipe. I have a passion for all things food. I love healthy, tasty recipes, as well as sugary treats. I graduated in Home Economics Education & taught high school foods classes for a few years. Now, I just like to cook & create for my family. I created this blog to share my love with others. I think a great recipe is meant to be shared. I hope you enjoy some of my favorites. Question or comment? Send me a note: firstname.lastname@example.org
