Crispy Cilantro Lime Chicken

Print Friendly and PDF Another great chicken recipe.  I can't resist a chicken recipe...  I will definitely make this again!

4 chicken breast halves
1/4 bag tortilla chips, crushed
1/2 tsp garlic powder
1/4 tsp ground black pepper
1/3 c. honey
zest of 2 limes and juice from one lime
1/2 c. sour cream
1/3 c. finely chopped cilantro
1/2 c. salsa
1/2 c. shredded jack cheese

Crush tortilla chips and add garlic powder and pepper to them.  Mix together honey, half of the lime zest and half the lime juice.  Coat chicken breasts with honey lime mixture, then coat with crushed tortilla chips.  Bake at 400 degrees for about 20 minutes, until nearly cooked through. Mix together remaining lime juice, zest, cilantro and sour cream.  Remove chicken from oven and top with sour cream, salsa then cheese.  return to the oven for 7-10 more minutes- until cheese melts and is slightly golden and chicken is cooked through. 

I served this with a mexican rice.  It was delicious!

I just finished this and it was amazing! I left out the sour cream to save some calories,but it was so moist and flavorful. Thank you!
