Crispy Tilapia with Fresh Pico de Gallo

Print Friendly and PDF I have a great tilapia recipe to share with you today.  It was a really easy meal. You know I like that!   I topped it with a fresh salsa with tomatoes from the garden. Yum! 


1/2 c. cornmeal
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
1/4 c. milk
1 1/2 lbs tilapia

Mix cornmeal & spices.  Pour milk into a bowl.  Dip fish into milk then into cornmeal mixture.  Heat 2 Tbsp oil in a saucepan over medium heat.  Cook about 5 minutes per side until golden & crispy.  Top with pico de gallo.

For Pice de Gallo:
dice 3-4 tomatoes
1/4 bunch fresh cilantro
juice from 1 lime
2 green onions
salt
1/2 can black beans
1 clove of minced garlic

Mix.
