Coconut-Chocolate Mousse (Dairy Free)

I recently made this simple little treat & it was so good (so good, that I made it again)!  I love that it is dairy free & a healthier alternative.  Coconut milk is high in fat, but the saturated fat in coconut is quickly turns into energy instead of storing it as fat. Therefore, even though it's high in saturated fat, coconut can aid in weight loss. Coconut milk is quite high in Folate, Iron, Potassium, Vit. C, and many other nutrients as well.  Plus, if you have dairy issues, this is a GREAT substitute.



So, here's what you'll need:
1 can coconut milk- chilled in the fridge for a few hours
1/4 c. cocoa powder
1/4 c. sugar (you can add a little more or less depending on how sweet you want it)
1/2 tsp vanilla
shredded coconut (if desired)

Open the can of coconut & leave it open in your fridge for a few hours.  It will thicken.  Pour into a bowl & whisk the ingredients together.  If it is still runny, beat with an electric mixer until thick.  Chill.

interesting. i never knew that coconut milk thickens if you leave it open for a period of time. i have to give this a try soon. maybe on valentines day. I love chocolate mousse but never made it because of the amount of chocolate, cream and egg yolk in it. this is perfect! thanks for sharing:)

This is so delicious! Thank you! One tip is that lite coconut milk does not work well. Made with full-fat, I want to eat this every day.
